try this: grilled herb shrimp with mango salsa

This is one of my kids favorite meals. I have to double it and we NEVER have leftovers!! This recipe sums up why I adore Ina Garten: simple, fresh and amazing!! We just made this camping over the fire and it was soooooooooooo good!! (Not your typical camping fare, huh?)


Grilled Herb Shrimp
3 garlic cloves, minced
1 medium yellow onion, small-diced
¼ cup minced fresh parsley
¼ cup minced fresh basil
1 teaspoon dry mustard
2 teaspoon Dijon mustard
2 teaspoons kosher salt
¼ teaspoon freshly ground pepper
¼ cup good olive oil
Juice of 1 lemon
2 pounds jumbo shrimp (16 to 20 per pound), peeled (tails left on) and deveined

* Combine the garlic, onion, parsley, basil, mustards, salt, pepper, olive oil and lemon juice.  Add the shrimp and allow them to marinate for 1 hour at room temperature or cover and refrigerate for up to two days.

* Prepare grill and brush the grilling rack with oil to prevent the shrimp from sticking.  Skewer the shrimp and grill for 2-3 minutes on each side, until pink.

Mango Salsa
2 tablespoons olive oil
1 1/2 cups diced yellow onion (2 onions)
2 teaspoons peeled and minced ginger
1 teaspoon minced garlic
2 ripe mangos, peeled, pitted, and cut into 1/4-inch pieces
1/3 cup freshly squeezed orange juice
2 teaspoons packed light-brown sugar
1 teaspoon coarse salt
1/4 teaspoon freshly ground pepper
1 to 2 teaspoons minced fresh jalapeño pepper (1 pepper)
2 teaspoons finely chopped fresh mint leaves
*Heat olive oil in a large saute pan over medium-low heat. Add onions and ginger, and saute until onions are translucent, about 10 minutes. Add the garlic, and cook, 1 minute more. Add the mangos; reduce heat to low, and cook for 10 more minutes. Add orange juice, brown sugar, salt, pepper, and jalapeno. Cook, stirring occasionally, until the orange juice has reduced, 3 to 4 minutes.
*Remove from heat, and stir in mint. Serve warm, at room temperature, or chilled.

getting braver!

On Saturday we went to Dorney Park for my husband’s work party. It was like a hundred zillion degrees outside, so shockingly the park was practically empty. Most people were smart enough to stay home in their air conditioning instead of melting in the sun.

Colin was hilarious. He started out so so timid in Camp Snoopy, riding all the little rides there, like his favorite ride, the race cars:

Finally, we got him on the kiddie roller coaster. Which he loved.

And then he discovered the cars. Do you know how many times we rode these?? Colin wants you to know he is an excellent driver who stayed on the road the whole time and will someday be a racecar driver.

Then he started getting much braver. I think he was trying to keep up with the big boys, cause he was going on some rides that he was a little small for! By the end of the night, he was even on the scrambler! Look, you can barely see his head!

Such a fun day!!

Tucked in by ELMO

My kids will never – EVER – forget the night that Elmo came to our room, read them a story and tucked them into bed.  Colin, who is 4, was obviously super excited. He loves Sesame Street and he especially loves Elmo!! But even the older girls were beyond thrilled to have Elmo to themselves. When else do you get Elmo all to yourself??

We had a knock at our door and the kids – who rushed back to the room from the pool to wait for Elmo – were bouncing around in excitement. We opened the door and there he was!!! It was so so sweet! After huge hugs, the kids lead Elmo over to the bed where they were sleeping and he climbed right in.

Each kid got a little Sesame Street stuffed animal to cuddle with during their tuck in!

Then we settled in to read a bedtime story together.

Oh, the sweet Elmo cuddles.

They all got good night kisses from Elmo and were tucked into bed.

These Sesame Character “Night Night” tuck in packages are totally worth the extra cost. It was one of the trip highlights for the kids and they have talked about it to everyone they know! It was so so sweet! Truly, we will never forget this night.

Other characters available for the Character Tuck in at Beaches Resorts include Abby Cadabby, Grover, Zoe, and Cookie Monster. After talking to everyone it sounds like Cookie super fun for a night time tuck in too. Character tuck-ins are $85 per child and $30 for each additional child. This also includes a free stuffed plush gift for each child. Now we love Elmo more than ever and will never forget this special time at Beaches Negril!!

Disclosure: We visited Beaches as part of a press trip, so a portion of our expenses were covered. Beaches Resorts provided a free Character Tuck In so we could experience their partnership with Sesame Street to facilitate this review. As always all thoughts and opinions are our own.

Summer Plan

Within one day of summer vacation, I was tearing my hair out.

(I’m not alone here, right?)

I swear, my kids had completely forgotten how to entertain themselves at all. A whole school of constant structure/activities/learning/friends was awesome – but after less than 24 hours, my kids were at loose ends with no idea what to do all day.

I was sitting at my desk, trying to finish up some work and I was interrupted 12 times in one hour. It was too hot, they were bored, Colin had a booger, could they play in the attic, could they play with playdoh, can they watch tv now, where was the cat food, someone was in someone else’s room…

I spent that whole evening making a list. Each child got a folder with their name on it. Meet my sanity saver.

Page one: SCHEDULE
Each child has a morning, afternoon and evening list of activities and chores to check off. Activities like reading and practicing instruments,  chores like cleaning the litter box and picking up toys.  We have no TV mornings, and they are only allowed to watch a show after all their checklist is complete. Now, by 4:00 in the afternoon, my kids have practiced instruments, read for an hour, cleaned up the house and done all their chores. (Colin’s list is obviously pretty simple, but of course he had to have one too 🙂

These are in a plastic sleeve, so they can check off boxes with dry erase markers every week.

Page two: READING LOG
Each of the girls has a reading log where they track how long they read, what book and how many pages.

Page three: EXTRAS
This page has extra chores the kids can do to earn some extra spending money, like weeding the flower beds (50¢), folding the laundry (75¢), really cleaning the bathroom ($1). Kids have to check with me before doing these, lest we have arguments over who did what!

Page four: SERVICE
This page has ideas of things they can do to serve others, like a list of people to write letters/draw pictures for and ways they can help us (reading to Colin, playing a game or activity he wants).

Page five: BIBLE MEMORY
Each child also has a list of Bible Memory verses for the summer that they are working on and some Bible passages they are reading. This is the Bible Memory Work Checklist we are using – I HIGHLY recommend it!

my week in instagram

This week was so so busy. But super fun!

A huge part of my week was spent sitting by the pool while the kids took lessons.
We went for two weeks of lessons every day, so for two hours every morning, we were hanging out at the Y.

Thursday was dress rehearsal for dance. They let the little girls stay in the auditorium to watch the pointe ensemble.
Gracie was in awe. She was leaning forward, on the edge of her seat.
When it was over, she turned to me and said, eyes shining, “I’m going to do that someday.”

Poor Colin got two shots, then had to get several vials of blood drawn for testing.
The deserved ice cream, that did.
He was very generous and offered me some.
I passed.

The weekend was spent picking out tile.
Do you know how many shades of tan-ish tile there are?
A million billion zillion.
We went with the darker one.
We’re ripping out the mudroom floor today.
By “we” I mean my husband and his dad.
I will bring them cold drinks and offer helpful advice,
like “Don’t get grout on the carpet” and “Are you sure you’re doing this right?”

Mom Fashion | What I Wore

Its been a crazy week here. How does one little time ballet recital hijack an entire week?

Anyway, on Thursday we had dress rehearsal for the recital. So I wore this cute aqua shirt from Anthroplogie with my cobalt jeans. My goal is to wear more brights!

And Friday, I went to Red Mango and to the first recital. I wore my bright maxi from Kohl’s. (And forgot to take a picture. This picture is from Jamaica. I was not in Jamaica on Friday, sadly.)

Then Saturday I was casual, running around for errands and taking the kids on a bike ride on the trail. I went for some more brights!

 

Sunday it was actually a little chilly, so I wore this blue blouse from LOFT (clearance – score!) with flare Citizens jeans (super clearance! super score!!). My necklace is from Kohl’s (ALSO clearance!).

try this: red mango

On Friday we headed to Red Mango in Wayne for a special “Schools Out for Summer” treat.

YUM!!!!!!! We were so excited to experience Red Mango for the first time! I’ve heard great things – especially about their all-natural ingredients, no HFCS, probiotics and, well, YUM!!

All Red Mango makes is frozen yogurt (well, and smoothie). And they have it nailed. A-MAZING!  First we got our yogurt:

And you get to pick our own toppings.

Brace yourselves: your kids are probably going to pick toppings that will totally gross you out. Like gummy worms, which in my humble opinion, have no business being in a sundae.

Grace picked gummy worms, sprinkles, raspberries, chocolate sauce, and I’m not sure what else…

Colin had chocolate frozen yogurt with gummy worms, gummy bears, chocolate sauce and m&ms. And I think some other stuff. I lost track.

My sundae was completely normal. And TOTALLY AMAZING.

Coconut frozen yogurt, chocolate chips and shredded coconut. HEAVEN IN A CUP.

The verdict from the kids? SIX THUMBS UP! They want to go back and have it every day.
The verdict from Mama? Talk about a wholesome treat! TWO THUMBS UP! I need to try more combinations.

Recently, my son and I were at the airport in Montego Bay waiting to fly home from Jamaica. We got to the airport in plenty of time, ate a nice $30 lunch at Wendy’s (note to self: pack a sandwich next time) and we were waiting by our gate for the flight.
We heard rumblings… The flight was delayed.
We heard more rumblings… Our flight was really, really delayed!
I went up to talk to the ticket agent. And was told that there was a very good chance my son and I would miss our connection to Philly. And that they would not be providing a hotel for us, as this was considered an “act of God” and not their fault. Thus, I would be spending the night in Miami airport with a travel-weary 4-year-old and all our luggage.
I didn’t know what to do. My husband and girls were on separate flights, on their way to Philly excepting us home later that night. My cell phone didn’t work in Jamaica and I didn’t know what to do.
Then it hit me… SKYPE! I had wireless at the airport and I could call my husband via Skype!
Luckily I had downloaded some Skype credits into my account in preparation for my Skype Ambassador program. Thank goodness!!
(Everyone go online right now and add a few dollars to your Skype account for emergencies. Go ahead. I’ll wait. Did you do it? Good.)
Skype saved me that day! I was able to call my husband and he helped us figure out what to do. And we did not end up sleeping on the floor of Miami airport! Thank goodness!

Skype is a part of my daily life – I’m always chatting with my sisters or friends! But the video chat is something new that has become part of our routine. And my kids have fallen in love with video chat. They chat with me or my husband when we are traveling for work (or just upstairs – its not unusual for me to get a video call from my family room… and its my kids asking to watch one more show!). They chat with their aunties, their friends, their grandma – even their great grandma and grandpa!

We use Skype video chat to share so much with our loved ones who are far away. I can instantly stream my daughter’s school program or dance show to my family via video chat. (Mute your phone so you don’t disturb other people.) Even the smallest moments can be shared and families and friends can be that much closer to you with Skype.

Now I’m hooked on Skype calling! Its so easy, cheap and perfect for calling our relatives and friends who live overseas! I encourage you to give it a try – it is an absolute shame not to use such amazing technology. Moms today are more tech-savvy than ever before! Almost all my friend shave smart phones, text and use Facebook and twitter almost daily. But so many don’t Skype. I’m always telling them, “You have to try this!!” Mom Central Consulting just surveyed 1,200 moms for their views on technology in their daily lives:

I stopped in Anthropologie this week. They need a warning label on the front door. I now want everything in three colors. And I want to redecorate my whole house.
