disney’s polynesian resort

We just recently enjoyed a three night stay at Disney’s Polynesian Resort, part of the gorgeous Walt Disney World Resort in Orlando, Florida. And when I say “enjoyed” I mean “had the socks knocked off of us.” Lets start at the beginning:

We pulled up to the Polynesian after getting off the Magical Express, walked over a waterfall-lined, tropical walkway lined with flaming tiki-torches and into the amazing lobby. We were all given leis and my kids were literally squealing in delight – it was just so beautiful. The main building – the Ceremonial House – hosts the hotel main desk, several shops and restaurants and the walkway to the monorail. Seeing as its Disney, the staff was absolutely delightful.

Our room was a standard garden view room. It had two queen beds, a day bed, gorgeous Polynesian-style decor  and a huge marble bathroom with private toilet. The rooms also have coffeemakers, refrigerators and microwaves (on request), hair dryers, irons and ironing boards and an in-room safe. We also had a crib in our room (also complimentary on request). There was more than enough room for our family of 5, the huge double stroller, our four suitcases and our piles of other stuff. Our room was quiet, comfortable and gorgeous!

As I’ve said before the two non-negotiables of a hotel are 1) comfy beds and 2) a great shower. The beds at the Polynesian were very comfy. I loved the bedside lamps on a dimmer – they made perfect nightlights for the kids. (The hotel also will provide bedrails if you need for little ones). The shower was literally my only disappointment with this hotel. Our shower was weak – only one setting worked and not very well. I couldn’t even get my hair clean.

The hotel offers so much right on site (which we learned during a rainy day!). There are four restaurants on site – one of which is Ohana, which offers a popular character breakfast. (Get there early, even with a reservation. Its really popular!!) Captain Cook’s is a quick service restaurant that offers kids meals for around $5 as well as bottles of milk and juice that we stocked our fridge with to pacify the toddler until we could get him real breakfast. The Spirit of Aloha Dinner Show is very popular as well. They even had craft activities every afternoon for the kidlets.

As for location, I cannot imagine a better location within the Disney Resort – its located directly across the Seven Seas Lagoon from the Magic Kingdom. You can even watch the fireworks from the sandy beach at the resort! The monorail comes right outside the lobby and within minutes you can be at the Magic Kingdom. Buses to Epcot, Downtown Disney, Disney’s Hollywood Studios and Disney’s Animal Kingdom pull up right outside, or you can walk one block to the Transportation Center and get the monorail to Epcot.

This hotel was FABULOUS! Our next trip to Disney, I will look into staying here first before any other Disney hotel. The location is just too perfect!! And my kids, who have stayed at lots of hotels in their young lives, said this was their most favorite hotel ever!

disney on ice brings disney magic to philly

in Philly. To say that my girls were super-dooper-crazy-excited would be the understatement of the year! They were off-the-wall bonkers excited!

It was, of course, amazing. What else do you expect from Disney? The costumes, sets, the special effects and skating were all completely incredible. And our kids were in awe. We left Colin at home and brought Ellie's friend, who had never been to Disney, and it was so, so sweet to witness her first time seeing Disney characters in real life. My very favorite part was when the scene would change and suddenly a whole new set of characters would come out. They would shriek and yell, "Mom! MOM!! Look!! Its BELLE!!! SCREAMMMM!!!" My husband and I enjoyed the show too (I loved it being the total Disney nut that I am) but the very best part was watching the kids.

we’re running away to join the circus

Last night we took the girls to Ringling Bros. and Barnum & Bailey all new Zing Zang Zoom circus playing at the Wachovia Spectrum! SO FUN!! You must, MUST go see it!

First, we were able to actually meet some of the performers at a party hosted by Mom Central. My kids were a little wary of the clowns, but began to warm up to the performers after the ringmaster did a magic trick for them! Mom Central provided us with these amazing gift bags which included these adorable magicians hats, which the girls had all the performers sign, which was so cute! Then we went to the animal meet-and-greet, which was much, much more exciting for my little animal-obsessed children. They thought this was so, so cool. We got even closer to the animals then we do at the zoo! Ellie's favorite was the horses, naturally!
DSCN1021-1 Then we went inside for the all-access preshow and saw clowns and magic tricks, met more performers and got autographs.
The kids were having so much fun!
Ellie said, "Mom, the circus is so cool!"
How fun was it to tell her that, actually, the circus hadn't even started yet!

Well, then the show began.  I don't think they even blinked throughout the opening number. I don't know what they were expecting, but it wasn't all that! There were elephants and horses and acrobats flipping around near the ceiling and dancing and music and clowns — they didn't even know where to look!
DSCN1076-1 I can't decide what was my favorite part – listening to Ellie laugh hysterically during the dog performance or watching Gracie put her hands over her eyes (while peeking trough her fingers) as the man jumped through a ring of fire.
My kids were riveted – absolutely riveted – through out the entire show. It was incredible. They normally can't make it through an episode of Dora without getting bored and distracted. But they were on the edge of their seats for the entire show. It was so, so much fun for us as parents to watch their amazed faces and hear their giggles and cheers. 

We hadn't even pulled out of the parking lot when they were asking if we could go again next year! If you're in Philly, go check this show out! If you do go, a few pointers:
DSCN1060-1 GET THERE EARLY.Philadelphia traffic aside, there is a ton to do before the show. You do not want to miss the animal meet-and-greet and the preshow. Its all included with your ticket, so go and get your money's worth!
Be prepared to buy a hat or a program or something. I know, I know, they cost a small fortune. But all the performers will give autographs, which our kids thought was so much fun!
Go to the dollar store beforehand and buy some of those glow-in-the-dark necklaces and stuff. I meant to do that and forgot, but some other families did and – not only were my kids were totally jealous – but they looked so cool! (We are meanies who refused to buy $15 flashlight-thingys.)

gourmet fridays: roast beef with carmelized shallots

I’m making a version of this for a friend’s birthday dinner this weekend. Yummy yummy.

Roast Beef with Carmelized Shallots
serves 10-12

6 pounds boneless rib-eye roast (with fat), tied, if desired or
9 pounds bone-in rib-eye roast (with fat)
Coarse salt and fresh ground pepper
2 pounds shallots, peeled and halved if large
2 tsp light brown sugar
2 tsp balsamic vinegar
1 cup dry red wine
2 tbsp dijon mustard

1. Preheat oven to 500°. Season beef with salt and pepper. Place in a large roasting pan; roast until golden brown, about 30 minutes.
2. Reduce oven temperature to 325°. Place shallots around beef; roast until an instant-read thermometer inserted into thickest part of beef registers 130° for medium-rare, 1 to 1 1/4 hours more, turning shallots with tongs after about 30 minutes. (For bone-in, plan on 2 hours cooking time.)
3. Transfer beef to a platter; tent loosely with foil. Transfer shallots to a shallow bowl (continue cooking if not golden brown). Toss with sugar and vinegar; season with salt and pepper. Cover with foil to keep warm.
4. Pour off fat from pan. Add wine; cook over medium heat until syrupy, scraping bottom of pan, 2 to 4 minutes. Add 2 cups water; cook until reduced by half, 4 to 8 minutes. Strain into a small bowl; whisk in mustard and any accumulated juices from beef. Season with salt and pepper; serve with beef and shallots.
