This is my life of late.

Colin – like most two-year-olds – does not seem to understand the concept of "wait a minute." So we have lots of moments like the video. And lots of conversations that sound like this:
"Hang on, Sweetie, I'm on the phone!"
"I'll be there in a minute!"
"I can't open the door, Colin, just wait. Because Mommy is going potty, that's why."
"I will be there in JUST A MINUTE, Colin!"
"Colin, I can't get you a snack right now because I'm taking a shower."
"I will be RIGHT THERE!"
"I can't reach your drink that you threw on the floor because I'm driving on the highway."
"JUST A MINUTE!!!!!!!!!!"

Anyone know how to explain the concept of waiting to a toddler? I'm not optimistic, since I don't wait very well either and I'm 32….

This past week, I was one lucky Mama and I was able to scoot around town in a brand new 2011 Chevy Traverse.

Let me tell you, I was not sad to leave my minivan behind for a week. That van has been very good to us (including bringing us safely through two accidents), but lets be honest… it is not the coolest car in the world 😉
We've been looking at small SUVS to replace my husband's ten-year-old car because we want something with all wheel drive that would fit our whole family, but I have not been impressed with the interior size. When you have three car seats, you're just limited in your options, I guess. And I've been under the impression that I was going to have to be stuck with a minivan until they all left home and went to college, but look:

That is three car seats – THREE. WITH room for more! I was amazed. So you see those captains chairs? The kids could easily climb in and out without moving seats or climbing over things. WHICH I LOVED. The Traverse is really fun to drive.  It’s remarkably quiet and handles nicely, delivers a smooth ride (even in the very back seat!) and the brakes are remarkably responsive, even in the torrential rain I was driving in. 

I LOVE the inside. Its darn pretty on the outside, but the inside really won me over. The dashboard is laid out perfectly – everything is right where it should be. There's tons of room, a place for my coffee mug, my phone, loads of storage – even a special spot to store my GPS. Our Traverse was loaded with a leather interior, all wheel drive, a backup camera, a power lift gate (NICE!!!) and it even included a DVD player, which the kids thought was "SUPER AWESOME!"  The driver’s seat is really comfortable, I loved the adjustable lumbar support – that would make a long drive much more comfy.

My biggest concern with a new car is storage. We take a lot of road trips and go camping, so we need LOTS of room. As you can see, the trunk was surprisingly roomy:

It easily fit a huge load of groceries and the stroller. And the soccer bag. And the dance backpack. And the boxes and boxes of items I carted around town while helping with my daughters' school auction all week. And – unlike the last SUV I tried out – things didn't slide around in the back every time I took a corner. Very annoying. I'd love to try this out for a long trip – I'd be curious how we'd fit everything we'd need for a whole weekend of camping!

There were only a couple things I didn't like. I found the backup camera annoying – I have to parallel park a lot and the little alarm that went off to tell me when I was close to another car drove me nuts. My husband didn't like having the windshield wipers and blinkers on one control, he kept accidentally turning on the wipers when he went to turn. It also seemed like it was a little slow to accelerate when I was merging in heavy traffic, but around town it was just fine.

Bottom line: I really liked this car. My kids loved this car. (My daughter was actually in tears when they came to get it. Then the girls asked if they put all the money in their piggy banks together would they have enough money to buy one. And with a price tag starting at around $30,000, they are a little short.) My husband even liked it (He was really surprised how much he liked it!) The parents at soccer practice were all checking it out and were so impressed. My mom loved it too! This is a great family vehicle – do not forget to add it to your list of cars to check out! 

 

try this: slow-cooked beef minestrone

This soup is dinner tonight! It takes a little but of prep-time, but if you do it the night before, you can just throw everything in the slow cooker and you'll be ready to go that morning.

12349 Slow-Cooked Beef Minestrone

1   pkg (about 1.6 lbs) Boneless Beef Chuck Roast, cut into 1-inch cubes
Wegmans Pan Searing Flour
2   Tbsp Wegmans Pure Olive Oil
1   pkg (16 oz) Food You Feel Good About Cleaned & Cut Minestrone Soup Vegetables
Salt and pepper
1   carton (32 oz) Food You Feel Good About Beef Culinary Stock
1   can (14.5 oz) Wegmans Italian-Style Diced Tomatoes
1   pkg (24 oz) Italian Classics Seasoned Tomato Sauce (Prepared Foods)
1/2   cup dry Italian Classics Ditalini Soup Pasta
1   can (15.5 oz) Italian Classics Garbanzo Beans, drained and rinsed
1   pkg (6 oz) Food You Feel Good About Baby Spinach

You'll Need: 6-8 qt slow cooker, large braising pan

  1. Dust beef with pan-searing flour; pat off excess.
  2. Heat oil in large braising pan on MEDIUM-HIGH until oil faintly smokes. Add beef; sear 10 min until all sides are paper-bag brown.
  3. Transfer beef to slow cooker; don't discard pan drippings. Add vegetables to pan with beef drippings; season with salt and pepper. Cook, stirring, 3 min; add to slow cooker.
  4. Add stock, tomatoes, and sauce to slow cooker. Cover, cook 4 1/2-6 hours on HIGH or 8-10 hours on LOW.
  5. Add dry pasta and beans 30 minutes before end of cooking on HIGH (45 minutes before end of cooking on LOW).
  6. Add spinach to slow cooker; stir to blend well. Allow spinach to lightly wilt, about 2 min.

happy monday

Colin is doing better this weekend with the constant fit throwing. I think what made the difference was stopping rushing around so much and really focusing  on him when he was throwing fits. Ignoring him was NOT working – so I figured giving him attention might. He's making progress and WE HAVE A LONG WAY TO GO – but its getting a bit better. Thank you so much for your kind words on encouragement. This is something every mom can relate to, I guess!

This past week I've been enjoying driving the new 2011 Chevy Traverse. GM let me borrow one for a week. This little crossover is quite nice and super fun to drive – I may cry when I have to give it back because I have to say, I love not driving a minivan. LOVE not driving a minivan. I never thought I'd like a crossover so much (I usually am not a fan). I'll write up a full review soon, but it made my really busy week so much more enjoyable!  I was actually excited to run errands 😉

On Saturday, my husband took the kids out all afternoon so I could have an entire afternoon by myself. It was fabulous. I went to the mall and wandered through those stores that you really need to pick through slowly without kids running around and hiding under racks of clothes. I love pouring through racks of clothes looking for that super bargain – and I got some terrific bargains! I'll be posting a fashion haul over on b*Stylish later this week!

This week, I have the big kids consignment sale so I'll be sorting through piles and PILES of kids clothes and trying to decide if I'm ready to part with all that baby gear yet. Why is that so hard? You'd think I'd be ecstatic to get rid of all this stuff that is taking up my whole attic. But instead, I'm feeling sad about it. Weird.

Colin's new thing is to throw fits. OVER EVERYTHING.

Today I lost count. I really tried to keep track, but I just couldn't.

He cried and screamed when my husband got him out the the crib, when we changed his diaper, when we took off his pajamas, when we suggested going downstairs for breakfast… when I actually gave him breakfast, he threw a kicking and screaming on the floor fit because I opened his yogurt when he asked me to.
Then he stopped and ate.
Then he needed a diaper change and his fits started again.

He hates getting a diaper change – he cries and claims that it "hurts." He hates clothes (except his red shorts and favorite dinosaur shirt). He hates shoes. He hates whatever i give him to eat. He hates his car seat. He hates going places. He hates coming home.
EVERYTHING makes him cry.

I'm exhausted.

I feel like the constant background noise is his crying and/or screaming lately. Its awful. I constantly have a headache from it. I am so embarrassed to take him places – I'm tired of being that frazzled mom carrying the screaming kid out of the store.

I don't know what to do.

UPDATE: He brought me to tears in the Target parking lot. He was throwing a fit all through Target because I made him wear his shoes (I know. Cruel.) But I had to run in to pick up contact solution because I was completely out. I stopped at the Starbucks in Target to pick up some coffee to help me get through this crazy day. Then he started throwing another fit in the Starbucks while they whipped up my drink, so I ended up carrying him out of the store through the parking lot and we were walking up to the car and I was fishing for my keys… and he wiggled and I dropped my bags and my coffee fell upside down on TOP of my bags. So not only did I lose my coffee but my bags got splashed with coffee. Including the cute dress we picked up for Gracie. 
So then I cried.

try this: Citrus Cooler Margarita

Last week, I headed up to New Jersey with Shannon and Zareen to join in Ladies Night In with Chef Marcela. It was an absolute blast and Chef Marcela was absolutely darling. She made some absolutly DEVINE Mexican food (which I'll be sharing soon – no worries) and as the evening was hosted by Sauza Tequila, there were some killer drinks! Here are my two favorites:

Citrus Cooler Margarita

Serves 6

The perfect way to combine tequila and wine. The wine makes the tequila taste so fruity. It is irresistible!

Ingredients:

1/2 part white wine
1 part limeade
1 part lemon lime soda
1/2 part Sauza Tequila Blanco

Method of Preparation:

Combine all ingredients in a pitcher. Mix well. Serve cold or iced.

Warm Winter Margarita
Serves 4
Perfect for a cold day. This drink is full of flavor and makes the tequila blend smoothly.

Ingredients:
28 oz apple juice
1 cinnamon stick
2 cups dried fruit of your choice
2 tbs granulated sugar
6 oz Sauza Tequila Blanco

Method of Preparation:
Combine apple juice and cinnamon in a heavy pot. Bring to a boil, reduce heat, and
simmer for 10 minutes. Remove cinnamon stick carefully. Add sugar, dried fruit, and
tequila. Mix well. Serve warm.

old friends

This weekend we had some old friends from college come into town. It was such a delight. I can hardly describe.

We have so many friends like this. Who have moved away, gone to grad school or medical school and ended up all over the country. We try to stay in contact, but with so many it has become an annual holiday card and maybe the occasional Facebook message.

But we picked up these friends from the train station on Friday and watched our girls positively launch themselves into their arms. They've only seen them once or twice in the past few years, but they remember who they are and we've been talking about their visit. We spent the weekend chatting and laughing and remembering why we all liked each other so much to begin with. Our kids totally fell in love with them and cried when they left.

It was heaven. There is nothing like old friends.
