honey lime chicken kebobs

I found this recipe via Pinterest recently and had to give it a try! I tweaked it a bit and my family was gobbling it up! Its a great sweet and spicy marinade that is perfect for summer. Obviously, you don’t have to make kebobs – my kids just love anything on a stick! I served it with oven roasted veggies to use up what we had from the farmer’s market.

Honey-Lime Chicken Kebobs


Ingredients
3 tablespoons soy sauce
2 tablespoons honey
1 tablespoon vegetable oil
juice of one lime (3 tbsp lime juice)
1/4 cup chopped onion
4 garlic cloves, minced
red pepper flakes, to taste (We used about a teaspoon)
1 pound skinless, boneless chicken breasts
2 tablespoon fresh cilantro

 

Instructions

  1. In a small bowl, combine your ingredients, expect the cilantro. Whisk thoroughly.
  2. Cut chicken breasts into large chunks.
  3. Pour marinade over chicken breasts and turn to coat. Cover and allow to marinate for at least 1 hour, better if all day or overnight.
  4. Soak bamboo skewers in water for at least 15 minutes, then thread skewers with chicken.
  5. Grill on medium high heat for 6 to 8 minutes per side, until juices run clear.

adapted from Kitchen Meets Girl (Her’s seem spicer, so if you love spice, use that version. I took out some spice and added more garlic and some onion.)

When we had a little boy, we knew what was coming. Planes, trains and automobiles!
Like any little boy, Colin is completely obsessed with trains and has been since he was two. We have picked up a few pieces at consignment sales and have received a few as gifts, but we’ve never actually invested in a full train set.

So we were thrilled to try out the BigJigs Town & Country rail system. With over 100 pieces, it had everything we needed to make a whole village!

Let me tell you, we’re in the middle of a huge heat wave and this train set was a lifesaver! All three of my kids sat and played with the Big Jig set for an entire afternoon. (Veteran parents will recognize how miraculous that is!) They had characters, storylines – it was a blast.

BigJigs train sets are very high quality, made with real wood and made not only to just survive preschoolers, but made to last for years and years. These are toys that will last through my three kids, get passed on to nieces and nephews and still have life in them! They were fully compatible with all of the other train tracks we have – you can see Colin’s electric Thomas in the picture worked just fine (which is more than I can say for some other brands of tracks we have).

We highly recommend BigJigs – it is one of my favorite toy brands. Every product we have from BigJigs has been exceptional and stands out from the masses of toys we’ve tried. These toys are classic – no fancy bells and whistles or batteries – toys that develop kids creativity and imaginations! Friday, I found my son outside proudly showing me his new best friend:

 

His name is “Toadie.” And Colin asked if he could keep him.

“No.” “Maybe.” said my husband and I simultaneously. (Guess which one was me?) We were heading out the door, so we put Toadie in a bucket while we ran our errands.

“Why are we putting him in a bucket? We’re not keeping it!” I said and was ignored by everyone.

Half an hour later, we were in PetSmart, next door to the Barnes & Noble where we had stopped.

“Why are we here? We’re not keeping it!” I said and was ignored by everyone.

Then we were looking at terrariums.

Why are we looking at these? We’re not keeping it!” I said and was ignored by everyone.

Then I listened as my husband was discussing frog/snake/reptile habitats with the PetSmart employee.

“HELLO!! We’re not keeping it!” I said and was ignored by everyone.

See this is the problem: Daddies are little boys at heart. So when their little boy finds a toad or snake or {insert slippery slimey creature here], Daddy is like “Awesome! My mom never let me have one! This is my chance!!” They are still made of frogs and snails and puppy-dog tails… they never truly outgrow it. So they try to talk you into things like keeping that snake you found while camping and honestly think that a boa constrictor is a fabulous family pet, never mind the fact that it would probably eat the cat. And your baby nephew.

Luckily, while debating between a terrarium and aquarium, my husband finally realized that this was actually quite an investment for a wild toad found hiding in the tomato plants and we decided that we should wait and do more research before investing in an animal habitat. Especially since he wants to get one that will work for toads, fish, lizards (remember Bob?) and snakes.

So we came home and let Toadie go.

Thank goodness.

I think it is absolutely hilarious that they think I’m going to live somewhere that has a snake in it.

fashion friday: old navy sale!!

We hit Old Navy on Wednesday. HARD.

We had an additional 40% off, so it was awesome. The kids got so many things for school. And mama got a few little things for herself 😉

I could not resist these polka dot shorts. They will go so well with my new white blazer I picked up on consignment last week!

staying connected with skype while traveling

When my husband’s grandmother passed away earlier this year, he was given a folder of letters he had written to her over the years while he was living overseas. They were such a sweet peek into his childhood. When he was growing up a world away from his grandparents, phone calls were very rare, as they cost several dollars per minute. Even after we got married, the majority of our communication with his parents, who still live overseas, is via email. Occasionally they would call, but not often. Now the cycle continues.
Yesterday my in-laws left. They flew back to India. And won’t see then for 11 months. My kids are devastated. It is so so hard to say goodbye. Colin was crying last night because he misses Grandpa already and the girls are both so sad.  They miss their grandparents so much. Miss going to their house, miss playing games with Grandpa, miss taking knitting lessons with Grandma, miss seeing them…

But wait – we still see them.

Isn’t that amazing?!?!? With Skype, the kids can video chat live with their grandparents who are on the complete other side of the world! If it wasn’t for that pesky 12-hour time difference, we could share even more – school events, concerts and such. I love the ability to live stream a dance performance or piano recital to all our family who can’t be there via the Skype app on my iPhone.

And its great for when you’re traveling!! We used Skype in Jamaica to share our time there with family… with no expensive roaming charges! We put or phones in ‘airplane’ mode and logged into the hotel’s wi-fi to use Skype. It saves us so much money! We are always video chatting when my husband or I travel for work – its a great way to help the kids deal with us being gone and for us to feel connected to what is going on here.  And the group chat is by FAR the easiest way to plan a family vacation without having to fill everyone’s email boxes with 8,635 emails about what to pack!

And I’m not alone – moms everywhere are discovering how valuable Skype is in making deeper connections:

I highly recommend the Skype app. That app has been so valuable to me. I use it daily personally, to chat with family and friends, but it is amazing professionally. I’ve video chatted via Skype while on vacation with my family and been able to work with clients while sitting at my kid’s swim lessons. Its a great way to stay connected and get work done – while still prioritizing and protecting my family time!

piles and piles

Last week, right before we left for vacation, my husband and his dad tiled the floor of the mudroom. The tile is down and looks fabulous. We still have to paint, install new trim, and grout.
So obviously, we’re still not done, This is not surprising, seeing as it took us a full six months to finish our bathroom renovation. I’m currently deciding between 50 shades of tan to find the exact color I want for a room I barely spend time in. (Obsessive, much?)
God help us if we every decide to redo our kitchen!

Anyway, the reason this is stressful is that tiling the mudroom means we had to move the washer and dryer into the family room.

Which means I am unable to do laundry.

You’d think this was a good thing.

Its only been like 5 days (since I was able to do laundry on vacation) and you would not BELIEVE how much laundry is piling up. A heat wave and kids at going to nature camp and coming home happy, exhausted and completely filthy is not helping.
Our house is starting to look like an episode of Hoarders.
But there is no WAY I am going to a laundromat in the middle of a 100-degree heat wave.

Anyone have a washer and dryer I can borrow while I spend way too much time deciding between nearly identical paint colors???
